The young winger bagged a triple as the Saints secured maximum points from their opening two Investec Champions Cup games with an eight-try hammering of the Bulls.
Sleightholme scored two tries and Pollock scored the bonus point try before the hour mark as a commanding Saints team ran riot in the latter period.
The Bulls were within touching distance with the score 14-5 at the break but a sin-binning to prop Alulutho Tshakweni in the 53rd minute for a unnecessary trip proved decisive and they did not score a point in the second half.
England fly-half Fin Smith added 10 points from the tee as Saints moved to the summit of Pool Four on superior points difference from defending champions Bordeaux with the two teams on 10 points.
The manner of this victory, coming after a 35-27 victory on the road at Pau previously, means last year's losing finalists Northampton could not have asked for a more ideal beginning as they look to improve on that this season.
Bulls fly-half Kade Wolhuter failed with an early shot at goal before Saints took the lead when Henry Pollock made a break before passing to Ollie Sleightholme who showed his pace to sprint away to the try line.
But an mistake from Sleightholme allowed the Bulls back into the game as the ball slipped from his grasp in contact, allowing Bulls wing Stravino Jacobs to hack the ball forward and show blistering pace of his own to score after 22 minutes.
Shortly after, Northampton had their second try as fast passing from Alex Mitchell at the base of a ruck and then Smith put Hendy over in the corner to make it 14-5 at the break.
Saints were on top in possession and territory and were being given a helping hand from the opposition fly-half Wolhuter who twice missed touch with penalty kicks to bring the pressure back on the visitors.
That told after 48 minutes when Fin Smith was again the architect, stepping inside to wrong-foot the advancing defence before sending a perfectly weighted grubber kick over the line for George Hendy to collect his second and Northampton's third.
Bulls prop Alulutho Tshakweni was then sin-binned for a trip on Emmanuel Iyogun. The prop was insistent he had been responding to a trip momentarily before by the Saints player but the contact from the Saints replacement prop was ruled accidental when reviewed by the officials.
Northampton seized the opportunity of having the extra man to clinch the try bonus point through Henry Pollock before Coles and Ollie Sleightholme scored as the hosts notched three tries in five frantic minutes.
Hendy completed his triple with twelve minutes left on the clock and Josh Kemeny walked over for the eighth and final try of an outstanding day for Saints in the final minute.
The top two teams in the pool meet in a rematch of the previous season's final when the Investec Champions Cup returns in January as Saints head to Bordeaux-Bègles. The Saints then round off the group phase with a fixture at home against Scarlets on 18 January.
The Bulls, who have a single point from their opening two games, host Bristol Bears in their next outing before an away trip Pau.
